Our venue offers a vibrant and contemporary menu, incorporating smoked meats, modern Australian classics, and locally sourced produce across breakfast, lunch, and dinner services. This is a full-time position offering the opportunity to work in a dynamic and professional kitchen environment in one of Victoria’s premier tourist destinations. Responsibilities and Duties: Plan, organize, and participate in the preparation and cooking of food, ensuring consistency and quality. Prepare and cook meals across all services, including breakfast, lunch, and dinner, following our set menu, which includes items like smoked beef brisket, chicken kiev, pulled pork, burgers, steak sandwiches, and a wide range of breakfast classics. Monitor stock levels and control food costs by reducing wastage and improving gross profit margins. Ensure all dishes meet established standards for presentation, flavour, and portion consistency before being served to guests. Run day-to-day kitchen operations, including setting up for service, managing the pass during busy periods, and cleaning down after service. Work with the Head Chef in the recruitment and performance management of kitchen team members. Help plan new menu items and adjust dishes seasonally using fresh, local ingredients and keeping up with current food trends. Assisting the Head Chef in planning staff rosters. Train and support junior kitchen staff, providing clear instructions and guidance to help them build their skills and confidence in the kitchen. Implement and oversee food safety programs, ensuring compliance with hygiene and WHandS regulations. Qualifications and Experience: Certificate IV in Kitchen Management or a relevant commercial cookery qualification. Minimum of two years full-time experience as a Chef in a similar environment. Demonstrated passion for high-quality food and up-to-date knowledge of food trends. Proven ability to manage kitchen operations and staff in a busy service environment. Strong communication skills, both written and verbal. High attention to detail, particularly regarding food presentation and quality control. Experience in team leadership, including training and supervising staff. Ability to establish strong working relationships with suppliers, staff, and stakeholders.
